Golden Immunity Soup

I love this soup especially during the dark winter months for giving my immune system an extra boost. This golden soup has both immune boosting and glowing skin benefits. Carrots and leeks contain lots of vitamins specifically vitamin A and C. These two vitamins enhance the immune system and its function with their anti-inflammation and antioxidant properties.

Serves 8

Ingredients:

2 leeks roughly chopped

6 carrots roughly chopped

1 orange pepper roughly chopped

2 garlic cloves minced/finely chopped

2 tablespoon olive oil

1 teaspoon turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

Salt and pepper

1.1L of vegetable or chicken stock

1 tin of cannelloni beans, drained and rinsed

1 tin of coconut milk

Method:

Prepare vegetables are directed above.

Heat 2 tablespoons of olive oil in a large pot. Add the prepared vegetables and garlic to the pot.

Cook for 5-10 minutes until vegetables are soft. Add spices, salt and pepper. Stir spices through for 2-3 minutes.

Add vegetable or chicken stock into pot and tin of cannelloni beans. Bring to a boil. Once at a boil lower heat and bring to a simmer for 10 minutes.

Turn heat off. Blend soup with hand mixer or allow to cool enough to blend in a blender.

Add tin of coconut milk. Stir to combine as you bring the soup back up to a simmer to ensure warmed through.

Season with salt and pepper to taste.

Turn heat off and enjoy! Can be frozen or added to an alright container in the fridge for 3-4 days.
