Festive Chocolate Chip Cookies
One of my favourite things about the holidays is baking cookies on Christmas Eve. The recipe is based on the classic chocolate chip cookie, except I’ve added a little bit of spice ✨ The added spices of cinnamon and nutmeg, the cranberries and orange zest make these cookies smell and taste taste like Christmas! I will definitely be eating these until the new year! This recipe can be made vegan and gluten free if that is your preference see notes in (parentheses)
Serves 18 Cookies
Ingredients:
150g rolled oats
125g plain flour (oat flour if making gluten free)
1 tsp baking powder
1/2 tsp salt
1tsp cinnamon
1tsp nutmeg
Zest of 1/2 an orange
1tsp vanilla
1/2 cup of frozen cranberries, roughly chopped
1/2 cup of hazelnuts, roughly chopped (feel free to add a different nut of choice or omit to case of allergies)
115g softened butter (melted coconut oil if making vegan)
1 ripe 1 egg whisked (mashed banana if making vegan),
150g brown sugar
100g dark chocolate chips or chunks
Method:
Preheat oven to 180C. Line baking tray with baking paper.
Whisk together butter, (melted coconut oil if making vegan), egg (mashed banana if making vegan), vanilla and brown sugar.
Once combined, add in oat flour, cinnamon, nutmeg and baking powder to mixture.
Add in cranberries, nuts and chocolate chips, mix to combine.
Once mixed, divide the dough into tablespoon sized balls and drop onto prepared baking sheets.
Bake for 10-12 minutes, or until golden brown. Cool for 5 minutes before removing to wire racks to cool completely.
Eat warm out the oven or store in an alright container for up to 3 days.
